OAK LAWN - What started as one wellknown, successful restaurateur asking a peer for advice has resulted in a second La Duni restaurant that will serve as the springboard for a new Latino coffeehouse concept - La Duni Coffee Studio.
These days, the owners of La Duni Latin Cafe on McKinney Avenue in Dallas, Espartaco "Taco" Borga, a restaurateur, and his wife, Dunia Borga, a lauded pastry chef, are busy launching and promoting the "sister" La Duni restaurant the 3,300-square-foot La Duni Latin Kitchen & Baking Studio on Oak Lawn Avenue near Highland Park.
The Borg family partnered with Royce Ring and Mark Knauer, both of Knauer Inc., to fund the recently opened restaurant. Restaurant developer Ring joined Chicago-based Knauer, a restaurant and hotel architecture and consulting Finn, as partner almost two years ago.
The friendship and business partnership between Ring and Borga was set into motion about nine months ago.
