Jeff Levine, president of Margate, Fla.-based Salad Creations, admitted he was a little skeptical when Mick Owens, chief operations officer, suggested that they hire a psychotherapist to lead human resources. But he conceded that the idea made sense.
The 3-year-old Salad Creations has no front- or back-of-the-house. Employees prepare salads in front of customers, adding whatever ingredients they request - similar to the way food is prepared at a typical Subway or Chipotle restaurant. Crews will prepare $1,000 worth of salads during a typical lunch hour, so the salad chefs need to be organized, accurate, quick and friendly, even under stressful situations.
Not everyone can be a salad chef. The chain looks for certain types of people, which is why Leuine hired David Glowatzki as vice president of operational psychology and training.
