After a two-year hiatus, Aramark is returning to a role that it basically has played since 1976, that of major foodservice provider at the Olympics. In about two months a team of 2,000 people will begin serving athletes, coaches, officials and spectators at the Summer Games in Athens, Greece.
In preparation for the Herculean undertaking, the kitchen at the Olympic Village nearly is completed, and the menu is written, executive chef Michael Crane said.
"Product sourcing and menu planning have been intensive," Crane said. "Like the athletes, we have one chance. Operations need to go smoothly so athletes can get the meals they want and need quickly and get to their designated events."
Aramark, which began its Olympic career by serving the 1968 Summer Games in Mexico City, had had a presence at every Olympics since the 1984 Winter Olympics in Sarajevo. That string was...
