Abstract

El mercado de hongos comestibles es muy grande, siendo una alternativa alimenticia para reemplazar la carne, sumado a sus propiedades nutracéuticas y con la posibilidad de cultivarlos aprovechando desechos orgánicos de origen agrícola. Se recolectaron y prepararon semillas de almendra (Terminalia catappa) y cáscaras de achiote (Biza orellana), cacahuate (Arachis hypogaea) y arroz (Oriza sativa) e inocularon con micelio de Pleurotus pulmonarius.Se evaluaron los tiempos de crecimiento del hongo, la eficiencia biológica y relación entre minerales del sustrato y producto. En achiote y maní hubo mayor acumulación de proteína (12,4%±1,6 y 10,9%±0,6 respectivamente). La cáscara de maní fue el único sustrato donde fructificó el P. pulmonarius con relación entre la concentración de nitrógeno vs. diámetro del sombrero, del pie y longitud del pie (p<0,05) y eficiencia biológica de 8,47% en la primera cosecha, perfilándose como un residuo agrícola orgánico con alto potencial para el cultivo de este hongo.

Edible mushroom market is very large, making them an alternative to replace meat, in addition to their nutraceutical properties and with the possibility for growing them on organic wastes of agricultural origin. Almond seeds (Terminalia catappa), achiote (Bixa orellana) shells, peanut (Arachis hypogaea) shells and rice (Oriza sativa) husks were collected and inoculated with Pleurotus pulmonarius mycelium. Growth time, biological efficiency and relationship between mineral content in substrate and product were evaluated. Achiote shells and peanut shells showed a higher protein accumulation (12.4%±1.6 and 10.9%±0.6 respectively). Peanut shells were the only substrate where P. pulmonarius fructified, showing a significant relationship between nitrogen concentration and cap diameter, stem diameter, and stem length (p<0.05), with a biological efficiency of 8.47% in the first harvest. It is considered an organic agricultural residue with high potential for cultivating this mushroom.
