Michael E. Flickinger and Stephen W. Drew, eds. John Wiley & Sons, Inc., New York, NY 2,756pp., $1,750, indexed
This five-volume set is one of four encyclopedias offered by John Wiley & Sons that broadly cover different areas of biotechnology. The others focus on molecular biology; cell technology; and ethical, legal, and policy issues. The Encyclopedia of Bioprocess Technology is primarily devoted to fermentation, biocatalysis, and bioseparation, but there are also articles on applied molecular biology and cell technology, especially as they impact bioprocessing systems.
Subjects are discussed in a series of reviews or research papers written by internationally recognized researchers, and organized alphabetically by titles that are usually just a keyword or phrase. In some cases, articles are collected under a primary title (e.g., kinetics) with a series of secondary titles (e.g., enzymes, microbial growth). Others are identified only as a particular product such as L-isolucine, which is not included as secondary to the primary title of amino acids. It would have been much easier to...
