Abstract

According to the studies of the Institute of Mother and Child carried out under the auspices of the WHO (World Health Organization), up to 31.2% of eight–year–olds in Poland have too high body mass, of which 12.7% are obese, and 18.5% are overweight. According to WHO data in 2016, the number of children with severe and moderate overweight has increased tenfold in the last 40 years (the trend continues), which may cause the generation of young children and adolescents to be obese and at a high risk of disease. Different hydrocolloids may differentiate the properties of freeze-dried snacks. [...]properly selecting the right hydrocolloids is invariably important in designing a product with specific characteristics.
