Abstract

The waste problem in Indonesia is still unresolved and is increasing as the human population grows. Organic waste dominates the overall amount of waste and is mostly handled by direct disposal to landfills, which has a high potential to cause pollution to the environment. Nowadays, eco-enzyme has been developed using organic waste in the form of fruit peels and vegetable scraps through a simple fermentation process as an alternative effort to process organic waste and produce a multifunctional product that is environmentally friendly. This research aims to evaluate the quality of eco-enzyme produced from fruit peel and vegetable waste, and to identify the bioactive compounds contained in it using Gas Chromatography-Mass Spectrometry (GC-MS). The quality test parameters carried out were pH value and the presence of secondary metabolites with qualitative experiments in the laboratory, while GC-MS analysis was carried out using Shimadzu GCMS-QP2010 SE equipment. Quality tests showed that the eco-enzyme produced had a pH value of 3.07 and the positive presence of terpenoids, flavonoids, alkaloids, also tannins which are rich in benefits. GC-MS analysis revealed the presence of compounds such as octadecanoic acid, hexadecanoic acid, octadecenoic acid, and neophytadiene. Therefore, eco-enzyme produced from fruit peels and vegetable waste demonstrates antioxidant, antimicrobial, anti-inflammatory, lubricant, plasticizer, surfactant, and pesticide activities, so that if further researched and processed, it can potentially be used in various applications in the industrial and medicinal fields.
