In our final report from Bankside we look to the future of the business, starting with the outside catering arm
Bankside Outside, the spin-off business offering delivered buffets in the square mile containing the restaurant, is now achieving sales of L2,000 a month, and should be making profits of L10,900 by the end of the year.
Kelvin Macdonald AHCIMA hopes to get a bicycle customised for about L1,500 to deliver sandwiches and canapes. "It will have a refrigerated trailer to hold 10 of our trays, which sell at 10-15 a tray. We're talking about sandwiches, light finger buffets, which no-one else is offering here."
Macdonald will recruit a young person to do the deliveries. It could be an interesting job, with sales account manager responsibilities.
Bankside Outside has four regular customers so far. There are several menus:
sandwich platters for working lunches at L30 a tray, which will feed at least 10;
a speciality sandwich selection served on mirrors, with fillings such as brie and roasted fig, for corporate hospitality - L45 a tray; working breakfasts consisting of bacon ciabatta, kedgeree, pastries and croissants with juices and hot drinks from L6 a head; breakfast meetings at Bankside, with a...
