Abstract
Consumers are fickle and they continuously look for excitement in the frozen dessert category. Inclusion suppliers provide a relatively effortless means for formulators to be creative with product development. A dairy processor simply develops a base ice cream mix and blends in the inclusions. An innovative inclusion trend reported earlier this year in Dairy Foods was baked-good pieces. This concept is proving to be extremely successful for Perry's Ice Cream Co., Akron, NY. The company's new Pastry Shoppe line contains chunks of cake, cookies, brownies and pie pieces, along with swirls of caramel, fudge and fruit, as well as some nuts and chocolate pieces.
