The Pickled Parrot is spreading its wings.
The Caribbean eatery that successfully branched out of downtown Minneapolis with a popular Eden Prairie store has found several new investors and hired a CEO to take the concept nationwide.
Next on the table is a restaurant in Apple Valley, but new CEO and President Steve David wants to expand soon to the Chicago suburbs and, in five years, be opening between 10 and 15 locations annually.
Founder John White hired David away from Buffalo Wild Wings Grill & Bar, where he was chief operating officer, to assist with expansion. David and partners are in the process of establishing a name and corporate headquarters location for the new parent company, which is operating for now out of the Eden Prairie restaurant.
Eden Prairie and Apple Valley will be under that umbrella; founder John White will continue operating the original Minneapolis Warehouse District location separately, as if it were a licensee.
