Peter Gibbons is one of the country's top research chefs, but he started out in a completely different field, with a bachelor's degree in experimental psychology.
Upon graduation he realized that he wanted to move away from academia and be involved in something more hands-on, so he went to Hyde Park, N.Y., to get a degree at The Culinary Institute of America. Unlike many hopeful would-be chefs at The CIA, however, Gibbons had no intention of working in white-tablecloth restaurants.
