Abstract

Chef Nora Pouillon, who owns Restaurant Nora and Asia Nora, was an early proponent of organic dining, adopting the practice more than 22 years ago. In her tightly organized kitchens, organic produce moves smoothly from truck to table, ensuring that fruits and vegetables are served at their peak without danger of bacterial contamination.
